Fry mince, then the mixed vegetables until brown, then add a tin of crushed tomatoes and allow to thicken. When cooked, put aside to cool.
Meanwhile, boil a large saucepan of water, and add rice. The rice has be thick and ‘gluggy’ for this recipe to work.
Once the rice and the mince/vegetables mixture have cooled, you can start to put it all together.
Put the rice in the palm of your hand, then roll it between the palms of both hands, to form a ball about the size of a golf ball.
Roll in bread crumbs and put holes in your arancini, so they will cook inside.
Deep fry for about three minutes.
You can eat them as they are, or to make a main meal, you can put in baking dish, add sauce and cheese on top, and bake till hot and the cheese is melted.
